Shallow Pan for Roasts

Always use a shallow pan for cooking roasts. Using a shallow pan allows the air to circulate more efficiently. Before placing in the pan, add celery ribs, carrot sticks, or thick onion slices. This helps elevate the roast even more and makes a nice pot of drippings flavored with the vegetables for making your gravy.

BUTTERMILK PIE

2 cups Granulated Sugar
1/4 cup Flour
1/2 tsp Salt
4 oz Melted Butter
4 Eggs, beat lightly
1/2 cup Buttermilk
1 tsp pure vanilla extract
1 tsp Pie Spice

Thoroughly mix the first three ingredients. Add the melted butter; mix well. Add the eggs and beat together lightly. Add the buttermilk and the vanilla.

Preheat the oven to 300 degrees. Pour the mixture into a store bought or from scratch pie shell. Bake at 300 degrees for 550 to 60 minutes or until golden brown. Remove from oven, sprinkle with pie spice and cool on a wire rack. Serve cool.

DILL..One of my favorites!

Dill is sold as dill seed, dried dill, or as fresh dill and is one of my favorites to use in summer salads. You can also use it to flavor chowders, soups, fish, meat sauces, and all kinds of potato salad. Put a dash on top a deviled egg and turn up the flavor! Reduce the salt in soups and other foods by using fresh or dried herbs to increase flavor without salt.
