Shallow Pan for Roasts


Always use a shallow pan for cooking roasts. Using a shallow pan allows the air to circulate more efficiently. Before placing in the pan, add celery ribs, carrot sticks, or thick onion slices. This helps elevate the roast even more and makes a nice pot of drippings flavored with the vegetables for making your gravy.
